Recipe - Sheet Pan Chicken


This recipe is not only quick and easy but a simple cleanup as well!

As a long time Stop & Shop customer I’m excited to be partnering up with them again to bring you this amazing recipe. It’s one of my favorite go-to meals because it’s quick and easy, contains minimal ingredients and there’s little cleanup! Their recipes at www.savoryonline.com have been a life saver for me when I’m in a crunch between different jobs, running my own side business and hustling the kids back and forth. Enjoy!

Ingredients:

- 2 lb potatoes

- 1 lb boneless skinless chicken breasts or chicken thighs (no skin)

- 2 lemons or 6 tbsp. lemon juice

- 1/4 cup olive oil

- 1 tbsp oregano

- 2 tsp garlic powder


Directions:

Preheat the oven to 400°F. Quarter potatoes. Place potatoes and chicken in an even layer on a sheet pan. Season with salt (in moderation) and pepper.Juice the lemons. In a bowl combine lemon juice, olive oil, oregano, and garlic powder. Drizzle olive oil mixture over chicken and potatoes and toss to coat. Roast for 25-30 min. or until an internal thermometer inserted into the thickest part of the chicken reads 165°F and potatoes are tender. Feel free to add a side dish of your favorite veggies!
