Recipe - How to Get Your Kids to Eat Veggies

Getting your kids to eat vegetables can be a struggle. But by adding plenty of flavor and a bit of a disguise, you’ll be surprised at how much they will enjoy it. I received this product from Mann's Fresh Vegetables to make Turkey Broccoli Slaw Stir Fry. It has the flavor of Chinese food and the broccoli is shredded with carrots and and cabbage so it doesn’t look like the veggie they’re used to seeing.


TURKEY BROCCOLI STIR FRY:


Ingredients:

  • 1 pound ground turkey or chicken

  • 1 medium onion diced

  • 4 cloves garlic minced

  • 1/2 tsp ground ginger

  • 1 tbsp olive oil

  • 1/4 cup reduced sodium soy sauce

  • 1 tsp toasted sesame oil

  • 1 tsp rice vinegar

  • 1 tsp Sriracha sauce (optional)

  • salt & pepper to taste


Instructions:

  • Heat the olive oil in a large skillet. Add the onions and saute 2 minutes.

  • Add in ground turkey/chicken, garlic, and ginger and cook until browned.

  • Remove the ground turkey/chicken mixture and set aside in another bowl.

  • Add the broccoli slaw to the skillet and cook until tender, about 4-5 minutes.

  • Return the cooked turkey/chicken to the skillet with the slaw.

  • Stir in the sesame oil, soy sauce, rice vinegar, and Sriracha.

  • Season with salt & pepper to taste and enjoy!
