As a busy mom, this recipe is a life saver! It's quick, easy, the kids love it and it's perfect to pack on the go. And with only 5 ingredients (you can add grilled chicken for a bonus 6th ingredient!) it's a great last minute dish.
1 pound of whole wheat pasta
1 12 oz jar roasted red peppers
1 6 oz jar of basil pesto (or 3/4 cup)
1 ball fresh mozzarella cheese
1 bag of arugula salad (about 3 handfuls)
Cook pasta is salted, boiling water according to package instructions. While the pasta is cooking, chop the jarred roasted red peppers and mozzarella cheese.
Rinse the pasta under cold water for about 20 seconds.
Toss pasta, chopped roasted red peppers and mozzarella cheese, basil pesto sauce and arugula in a large mixing bowl. Serve or save in the refrigerator for up to 3 days.
